VINIFICAZIONE ED AFFINAMENTO
La fermentazione spontanea avviene con lieviti indigeni per circa 6-7 giorni in serbatoi d’acciaio inox termoregolati a temperatura controllata. Segue un ulteriore periodo d’invecchiamento in acciaio per un periodo di minimo sei mesi, prima dell’imbottigliamento.
